Japanese matcha for Austin.

Who we supply in Austin

Austin buys matcha the way it buys coffee: by origin and by story. East Austin and South Congress have cafes that list the producer on the menu, the university crowd along Guadalupe Street keeps iced matcha lattes moving all year, and the North Lamar corridor and the suburbs toward Round Rock and Cedar Park add boba and Asian dessert shops. The city's steady flow of new openings also means a lot of operators choosing a matcha supplier for the first time.

• Specialty coffee bars that want a named grade and a lot sheet they can talk about.
• Tea bars and matcha-forward cafes running ceremonial service next to lattes.
• Boba shops on North Lamar and in the northern suburbs.
• New openings that need to settle a grade before the menu goes to print.

Samples and wholesale delivery

Free sample kits ship by USPS to Austin addresses. Wholesale orders are milled to order in Japan. Ocean freight usually clears at a West Coast port or the Port of Houston and finishes by truck up I-35 or US-290; air freight usually clears at DFW or Houston rather than Austin–Bergstrom.

Permits and licensing

Austin Public Health permits food establishments in the City of Austin and in unincorporated Travis County. North of the county line, Round Rock, Georgetown, and Cedar Park are generally served by the Williamson County and Cities Health District, so check which authority covers your address.

• Your food establishment permit covers serving matcha drinks.
• Holding wholesale stock for other businesses or repacking under your own label generally needs a Texas DSHS food license.

Choosing matcha for an Austin summer

Austin regularly sees triple-digit highs through the summer, and a large share of matcha drinks go out over ice. Iced lattes are unforgiving: cold milk mutes sweetness and aroma, and a weak powder turns khaki before the customer reaches the door. For iced drinks, pick grades that keep their color and a clear matcha flavor under ice and milk: Ceremonial Barista and Organic Cafe are the usual pair.

Test the samples the way you will serve them: iced, with your milk, at your cup size, and leave one sitting for ten minutes. Heat also affects storage, so keep opened stock sealed and cool, and order in amounts you will use within a few weeks of opening.
